- 200g unsalted butter
- 185g soft brown sugar
- 3 eggs
- 115g honey, warmed
- 280g self raising flour
For the icing
- 100g unsalted butter
- 100g icing sugar
- 2 tsp milk
Method
- Preheat the oven 180 degrees (Gas 4).
- Line 12 muffin cases up in muffin tins.
- Beat up butter and sugar until light and creamy.
- Add the eggs, one at a time, beating well after each addition.
- Fold in the honey and flour until combined.
- Divide the mixture evenly among the cases.
- Bake for 18-20 mins.
- Transfer onto a wire rack.
- In another bowl put the butter and icing sugar.
- Add the milk and stir until soft.
- When cakes are cool, add the icing.
